Mr. Son’s Recipes

We started with 4 – 5 large cloves of garlic and 4 shallots, minced them all and added both to a bowl to use in all the recipes

Lemongrass Tofu

  • 2 blocks of fried tofu cubed
  • 1 medium tomato chopped in large pieces
  • ¼ onion in large slices
  • 2 stalks of lemongrass, pound the lemongrass with a meat tenderizer then slice in to small pieces
  • ¼ green pepper chopped in to small pieces
  • 1 medium red chili (medium spicy) diced
  • 1 small red chili (spicy) diced
  • Mix chilies & lemongrass
  • 2 spring onions cut in to 1-inch sections

 

  • Put 3 tbsp oil in a non-stick pan
  • Put a couple spoon fulls of garlic & onion in pan
  • Add lemongrass and sauté for a minute
  • Add fried tofu
  • Add ½ cup of water
  • Add 1 tsp of oyster sauce
  • Add 1 tsp sugar
  • Add 1 tsp mushroom stock
  • Add pinch of pepper
  • Add tomato, onion and green pepper
  • Add only the white pieces of spring onion
  • Add water as it evaporates
  • Add remainder of green onion
  • 1 tsp fish sauce
  • Done when sauce thickens
  • Remove from heat
  • Sprinkle with pepper
  • Sprinkle with dried onion

 

Vegetable Pancake

  • 1 large carrot cut in thick wedges then cut into long thin pieces
  • 4 large green beans cut diagonally
  • ½ cube of fried tofu in thin slices like the carrot
  • 4 green onion, use only the green part, chop in to small pieces
  • 2 cups pancake flour
  • 3 tsp other flour
  • 1 tsp saffron
  • Add 7 to 8 ¼ cups water to the mix
  • Whisk until runny with no clumps
  • Add green onion to the mix

 

  • Heat pan & add oil
  • Put a little of all the veggies (roughly 1/4) in the bottom of the pan and sauté for 30 seconds
  • Pour 2 large spoons of pancake mix in pan to coat bottom of the pan
  • Add bean sprouts to one half
  • Pour more oil on top
  • Cover and cook 1 minute
  • Stir the pancake to separate it from the bottom of the pan adding some more oil
  • When brown fold in half and cook for another minute
  • Cut in to 4 pieces with scissors

 

  • Dice a small red chili
  • 1 tbsp sugar
  • Hot water to mix with the sugar until dissolved
  • Add 1 tsp fish sauce
  • Add 1 tsp garlic
  • Add chili and ¼ lime squeezed
  • Put pancake in rice paper roll, add salads (mint, lettuce, ???), dip in sauce and enjoy

 

Com Ga

  • Boil 2 breast of chicken in water
  • Add ½ tsp saffron & ½ tsp of salt to the water
  • When done, tear by hand in to thin strips

 

  • Mix green papaya, coriander, mint, carrot, (small red pepper, medium red pepper chopped small), onion and toss

 

  • Add 1 tsp of diced garlic and onion to the rice
  • Add ½ tsp saffron to rice (steam rice and use while hot)
  • Add 1 tsp of salt
  • Add 1 tsp mushroom stock
  • Add 2 spoons of vegetable oil (ladle == spoon)
  • Then fry

 

  • Add chicken to vegetables
  • Add 1 tsp sugar
  • Add ½ tsp salt
  • Add ½ tsp pepper
  • Add 1 tbsp fresh lime juice
  • Put on top of fried rice
  • Top with dried onions
  • Serve with soy sauce mixed with garlic and chilies
